Pecan Cookies

From: Penny Beaudry, 1980




o        1 cup unsalted butter (softened)

o        ¼ cup sugar

o        3 cups flour

o        3 tablespoons brandy

o        2 cups chopped pecans

o        Confectionary sugar


To Prepare…


1.       Beat butter, sugar, and brandy

2.       Stir in flour to make a soft dough

3.       Work in pecans until blended

4.       Shape dough into balls

5.       Place 1 inch apart on a cookie sheet

6.       Bake in 300 degree oven for 25 minutes or until lightly golden

7.       Remove from sheet and roll in confectionary sugar

8.       Cool on wire racks

9.       When cool, roll in sugar again

10.   Store in tightly covered container
