Medium White Sauce
o 6 tablespoons butter or fat
o 6 tablespoons flour
o ˝ teaspoon salt
o 2 cups milk, cream or stock
o 1 ˝ cups cooked cut up chicken or turkey
1. Melt butter, blend in flour and salt.
2. Add milk gradually.
3. Cook over low heat stirring constently until sauce is thick and bubbly. A perfect white sauce is smooth, glossy, and satiny.
4. Add chicken or turkey, stir in well and serve at once over slices of toast or rice.
