Holiday Macaroons

From: Penny Beaudry, 1980




o        2 eggs

o        ¾ cup sugar

o        1/3 cup unsifted flour

o        ¼ teaspoon baking powder

o        1/8 teaspoon salt

o        1 tablespoon butter (melted + slightly cooled)

o        1 teaspoon vanilla

o        2 2/3 cups coconut (packed)


To Prepare…


1.       Beat eggs until they are foamy

2.       Add sugar

3.       Beat constantly until thickened (5 minutes w/ electric mixer)

4.       Fold in flour, baking soda, and salt

5.       Add butter, vanilla, and coconut

6.       Drop by teaspoons on greased and floured baking sheets

7.       Bake in 325 degree oven approximately 15 minutes or until golden brown around the edges

8.       Cool on wire racks


Notes: Makes about 3 dozen cookies

May be dressed up with chocolate chips, nuts, sugar sprinkles or halved candied cherries
