Easter Ham Pie (“Ah, Pizza-Gain!”)

From: I don’t know who, but Lenny made it in 1987 for the first time.

Ingredients

Crust

Filling

6 cups flour

2 pounds ham, cut into cubes

2 teaspoons baking soda

1 stick pepperoni, cut into cubes

3 tablespoons shortening (Crisco)

½ pound Soppressata, cut into cubes

4 eggs (beaten)

1 pound Prostino, cut into cubes

½ cup milk

1 pound Basket Cheese, cut into cubes

½ cup water

¾ pound Provolone Cheese, cut into cubes

pepper to taste

½ cup grated cheese

4 dozen eggs (beaten)

To Prepare…

1.       Mix together flour and baking powder; work in Crisco.

2.       Mix together eggs, milk, water and dash of pepper, then add to flour mixture.

3.       Mix with hands until like a pie crust dough.

4.       Divide dough and roll out onto floured board.

5.       Line pans with crust.

6.       Mix all filling ingredients together and fill the crust-lined pans.

7.       Bake in 325 degree oven for approximately 45 minutes to 1 ¼ hours or until crust is golden brown and knife in center comes out clean.

Notes: A glass dish is the best; use: 1 11” x 16” pan OR 2 9” pie pans.
