Damn Good Chili (“Carroll Shelby’s Original Recipe”)

o 2 pounds Coarse ground meat
o 1 large onion, chopped
o 1 green pepper, chopped
o 1 8-ounce can tomato sauce
o 1 8-ounce can water
o 1 tablespoon chili powder
o ¼ teaspoon cayenne pepper
o ½ teaspoon black pepper
o ½ teaspoon oregano
o 1 teaspoon ground cumin
o 2 cloves garlic, finely chopped
o 1 teaspoon salt
o 1 16-ounce can kidney beans, drained and rinsed
1. Brown ground meat, onion, and pepper in a 3 - 4 quart pan.
2. Add remaining ingredients except kidney beans.
3. Simmer 45 minutes over low heat, stirring occasionally.
4. Then add kidney beans and heat through.
Notes: Up to 2 cans of beans may be added.
Increase cayenne and/or chili powder for hotter chili.
