Creamy Lime Gelatin

From: Grandma (Mom Smith), 1972




o        1 package lime jello

o        ¾ cup boiling water

o        1 cup evaporated milk

o        1 9-ounce can crushed pineapple (undrained)

o        1 tablespoon lemon juice

o        ½ cup broken nuts (optional)

o        ½ cup diced celery (optional)

o        ½ cup mayonnaise

o        1 cup cottage cheese


To Prepare…


1.       Dissolve jello in water; cool slightly.

2.       Stir in evaporated milk and chill until very thick, but not set.

3.       Stir in pineapple, lemon juice, nuts, celery, mayonnaise and cottage cheese

4.       Pour into 8-inch square pan or a 5 cup mold

5.       Chill until firm
