Cherry Rice Pudding

Ingredients
o
¾ cup rice
o
1 ¾ cups water
o
1 teaspoon salt
o
4 cups milk
o
1 cup sugar
o
1 bottle Maraschino cherries –
cut up (1 large bottle + juice)
o
2 packages unflavored gelatin
(+½ cup water)
o
1 pint whipping cream (whipped)
To Prepare…
1.
Combine rice and 1 ¾ cups
water, 1 teaspoon salt in a 3 quart saucepan.

Turn heat on high
3.
When beginning to boil, reduce
heat to medium low
4.
Stir once with fork
5.
Cover lightly and simmer for
12 to 14 minutes or until all liquid is absorbed
6.
Heat milk and sugar; add to rice
7.
Soften gelatin in ½ cup cold
water and add to milk mixture; cool
8.
Add cherries and fold in
whipped cream
