Baked Stuffed Eggplant

From: Grandma [Mom Smith], 1970




o        2 medium size eggplants

o        1 pound hamburger (mixed like meatloaf)

o        2 quarts spaghetti sauce

o        1 cup grated cheese

o        breadcrumbs or flour

o        2 eggs

o        4 Tablespoons milk


To Prepare…


  1. Peel eggplant, then slice into ˝ inch slices.
  2. Dip slices in egg beaten with milk, then dip into flour or breadcrumbs.
  3. Fry slices slowly in a small amount of hot fat until browned on one side and rather transparent looking.
  4. Turn and brown on other side.
  5. Cool slightly.
  6. Put hamburger in between 2 slices of eggplant, sandwich style and put in casserole.
  7. Cover with spaghetti sauce and grated cheese.
  8. Cover casserole and bake at 350 degrees about 30 to 45 minutes.
