Baked Scallops

Ingredients

 

o        1 ½ to 2 pounds Scallops

o        ¾ cup butter (melted)

o        1 teaspoon lemon juice

o        Salt & Pepper

o        ½ teaspoon onion powder

o        1 stack Ritz crackers (crushed)

 

To Prepare…

 

1.       Mix together butter, lemon juice, salt, pepper, and onion powder

2.       Stir scallops into half of the mixture, then roll in half of the crackers

3.       Place in casserole dish and pour rest of liquids on scallops and top with rest of crackers

4.       Bake 20 to 25 minutes in a 350 degree oven

5.       Broil 3 to 5 minutes if not browned
