Baked Manicotti

4 cups flour

4 eggs

4 cups milk

3 pounds Polly-O Ricotta

4 eggs (beaten)

1 pound Polly-O Mozzarella, grated

1 teaspoon salt

1 cup Polly-O grated Romano or Parmesan Cheese


2 tablespoons chopped parsley or basil leaf


salt & pepper to taste


To Prepare…




1.       Stir milk gradually with flour until smooth.

2.       Add, stirring constantly, the beaten eggs & salt.

3.       For each shell, brush a 6-inch frying pan with olive oil, vegetable oil or  butter.

4.       Then pour ¼ cup of the mixture into pan, tilting pan back and forth so it spreads evenly.

5.       Let cook slowly.

6.       When set on one side, turn and let other side set.

7.       Slide off pan onto dish and repeat until mixture is gone.

8.       Let cool slightly.




1.       Blend all ingredients of filling together.

2.       Spread 3 tablespoons of filling on each pancake bringing sides over, so they overlap to hold filling in.


Arrange side by side in a greased baking dish.

Cover with spaghetti sauce and sprinkle with grated cheese.

Bake in 375 degree oven approximately 10 to 15 minutes or until heated.


Notes: Makes approximately 28 manicotti
